Give it a rough couple of weeks to get used to playing with a wheel. This applies to GTS, which is probably very similar or identical to GT7. With bad FFB settings, everything is either light or heavy, with no detail or dynamic range - you have no or very little idea about grip level. It's super intuitive when you get used to it, and it enables you to react to everything much quicker than by using visual input. When the wheel is heavy, you got grip - when the wheel is light, you lost grip - when it goes light and rattling, you're severely understeering. Follow Fanatecs recommendations on their forum. To be able to know how much to steer and how fast, and how much to twitch to the other side to counter-steer, you need good FFB settings. In the beginning you'll probably be slower with a wheel because of this, but after getting accustomed you should be able to be more consistent, faster, and involved in less incidents with other players online. It's very different when you don't got steering assist via gamepad, so you can't just jam the steering input to the left or right when entering a corner and expect the car to behave nicely - it will either understeer or oversteer to hell with a wheel.
